PEACH BANANA OATMEAL


Tonight I made a batch of oatmeal for the next two mornings so that I won’t have to make breakfast before work.  I had a very ripe peach & a brown-speckled banana, so I made this easy, healthy oatmeal.

INGREDIENTS
Yield = 2 large or 3 medium servings

Cups liquid (water or milk)
1 cup
Old fashioned oats
1
Banana, sliced
1
Peach, diced (frozen peaches will work if that’s all you have)
To taste
Nutmeg…freshly grated if you have it
½ tsp
Vanilla extract
¼ cup
Walnut pieces, chopped

PREPARATION
1.  In a small or medium saucepan, bring the water or milk to a boil.
2.  Stir in the oats & cook until done (about 5 min) over low heat.
3.  Stir in the fruit & vanilla extract.  After a minute, fold in the walnut pieces & remove from heat.

Enjoy!

SUGGESTIONS
Make a large batch & store in the refrigerator in pre-portioned containers
