WHITE BEAN DIP WITH GARLIC, ROSEMARY, & LEMON


Garlic white bean dip is my go-to appetizer recipe.  It is easy, healthy, & a great alternative to hummus or ranch-based dips.  My recipe is based on one from The Abs Diet.

INGREDIENTS
1 can
Cannellini beans, drained & rinsed
2-3
Cloves garlic
2-3
Sprigs fresh rosemary, chopped (or 1 tsp dried)
½
Lemon, juiced & zested
1 Tbsp
Olive oil (or less)
Pinch
Salt
To taste
Cayenne pepper

PREPARATION
1.  Put the cannellini beans in a mini food processor or magic bullet cup (large).
2.  Juice & zest the lemon into the cup            
3.  Add the rest of the ingredients.  

4.  Run the processor until the mix is smooth.  You may have to add more oil, lemon juice, or some water to thin the dip. 

5.  Refridgerate in an airtight container .  This will keep for about a week

SUGGESTIONS
  • Serve with fresh vegetables as a appetizer
  • Use as a spread in sandwiches
  • Eat with pita or flatbread
  • Pack a little with vegetables for a snack
  • Brush your teeth asap after eating this!  It's really garlicky.
