TANGERINE VINAIGRETTE

My Grandmother grows the best tangerines.  Recently she sent me home with more than I can eat.  This is my first attempt to turn them into something else beside a snack.  


Adapted (barely) from The Family Chef recipe for Cara Cara Vinaigrette

INGREDIENTS
3 tangerines, juiced 
1/4 cup oil (extra light olive or grapeseed)
a pinch of salt
1/2 tsp Dijon mustard
1/3 shallot, minced
zest of 1 tangerine
fresh chives (optional - use another herb if you prefer) 
Whisk everything together.  Adjust the seasonings to your taste.

 SUGGESTIONS
I've used this on many salads:
Beet Green, Carrot, & Herb Salad

Turkey, Apple, Carrot, & Pecan Salad for lunch:
turkey, diced (left over from Saturday's roast turkey)
romaine lettuce, torn
1 green onion, diced
carrots, cut in matchsticks
1 small apple, diced
a few raw pecans, broken into pieces
1/4 cup brown rice (also left over)
toss with tangerine vinaigrette
